Title: Duck Succe' for Four People (Netscape Recipe)

1 Well-hung Muskovy duck
  Some olive oil and vinegar
  Garlic, salt
  Juniper berries, rose
  Pepper

This is a simple course to prepare, but the result is most pleasing. It takes about 1 hour and 45 minutes and the meat should be enough for 4 people if you use the breast only, and considerably more if you use the whole duck.

Prepare the marinade by crushing pepper and juniper berries and mix them with some oil and vinegar (doesn"t say how much) Crush the garlic into the mix. Skin the duck.. This is relatively easy on a well hung bird. I suggest you start at the neck on the breast. Be careful not to damage the breast meat.

With a small and sharp knife, remove the breast from the bone. Put 2 pieces with the bone side up and cut a square pattern in them and sink them bone side down into the marinade. Let them soak for a couple of hours. If you wish, you can remove the meat from the legs and wings for a similar treatment.

Roast the meat in the oven at about 225*C for about 20 - 25 minutes. Cut into slices and serve with butter(?) shaked bruxelle sprouts, potatoes au gratin and port wine jelly. The duck is dark enough for a light red wine or a dry rose' wine.
